About Our T-Bone Steak

The T-bone is the show-off cut, and for good reason: the T-shaped bone separates a strip of sirloin from a piece of fillet, so a single steak gives you both textures in one plate. The bone itself is not just decoration - it slows heat transfer around the fillet side and adds a depth of flavour you do not get from a boneless steak.

We portion T-bones to whatever preference you have, exactly as we do on the counter at City Market. Ask for them thick if you want to cook them properly - a thin T-bone dries out on the fillet side before the sirloin side is ready. Around 3cm to 4cm is the sweet spot for charcoal or a heavy pan.

The trick with a T-bone is heat management. Start it over the hottest part of your grill to build a crust, then move it so the fillet side sits further from the coals than the sirloin side. Rest it standing on the bone. It is one of the best cuts we sell for a weekend braai, and it pairs well with a few beef sausages from our deli for the crowd.

How to Cook T-Bone Steak

  • Ask us for 3-4cm thickness - thin T-bones overcook on the fillet side.
  • On charcoal, position the fillet side away from the hottest coals.
  • Turn once, sear hard, then finish over indirect heat with the lid down if you have one.
  • Rest standing on the bone for 5-8 minutes so juices redistribute into both muscles.
  • Carve the sirloin and fillet off the bone separately, then slice each across the grain.

Three to four days in the coldest part of the fridge, loosely covered so the surface dries rather than sweats. To freeze, portion into meal sizes, press flat, wrap tightly and label. Thaw overnight in the fridge, never on the counter, and do not refreeze thawed raw meat.
