About Our Salmon Fillet

This is imported Norwegian salmon, and it is the most expensive thing on our counter. It is also, quite simply, the best fish we sell. The fat content is what sets salmon apart - those pale threads running through the deep orange flesh are what keep it moist and give it that rich, almost buttery quality no local fish can match.

Because of the fat, salmon is far more forgiving than a lean white fish. It also means it wants a hot, dry heat that renders and crisps the skin. Cook it skin-side down in a hot pan for most of its cooking time, pressing it flat, and only turn it for the last thirty seconds. The skin becomes the best part.

Salmon is best served medium - just barely opaque in the centre, still glossy. It is also superb baked whole in foil, cured, or hot-smoked. Very high in omega-3 fatty acids, vitamin D and protein. We bring it in to order as well as keeping stock, so call ahead if you need a particular quantity for an occasion.

How to Cook Salmon Fillet

  • Skin-side down in a hot dry pan, pressed flat, for 5-6 minutes of a 7 minute cook.
  • Turn only for the last 30-60 seconds. The skin should be crisp enough to snap.
  • Serve it medium - just opaque in the middle and still glossy, not dry and flaking apart.
  • Baked in foil: 180C for 15-18 minutes for a thick fillet.
  • Do not over-season. Salt, pepper, lemon and dill is all it needs.
