About Our Kingfish

Kingfish is the Kenyan coast's great grilling fish. It comes in as thick cross-cut steaks with a firm, meaty white flesh that does not fall apart over charcoal the way a softer fish does, and it holds its shape in a curry or a stew just as well.

The flavour is fuller than tilapia but cleaner than tuna - properly fish-flavoured without being strong. It has a moderate fat content that keeps it moist, and the central bone in each steak helps regulate the heat. We cut steaks to whatever thickness you want; around 2.5cm is the sweet spot for grilling.

This is the fish for a coastal-style preparation: marinate in lime, garlic, chilli and turmeric, then grill hard. It is also outstanding in a coconut curry, where its firmness lets it simmer without disintegrating. If you want something boneless and quicker, our fillets are the answer; for the leanest, densest option take tuna.

How to Cook Kingfish

  • Marinate 30 minutes in lime, garlic, chilli and turmeric - no longer, or the acid cooks it.
  • Grill 4-5 minutes a side on a 2.5cm steak over medium-hot coals.
  • Oil the grill bars well - fish steaks stick more than meat.
  • Excellent in coconut curry: it holds together through 15 minutes of simmering.
  • Cooked when the flesh releases cleanly from the central bone.

Fish is best cooked the day you buy it. If you must keep it, store it in the coldest part of the fridge on a plate over ice, loosely covered, and use it within one day.
