About Our Gizzard

Gizzards are the muscular part of a bird's stomach, and they are among the hardest-working muscles in any animal - which is why they are dense, lean and have that distinctive firm chew people either love or have not learned to cook yet. In Kenya they need no introduction: fried gizzards with kachumbari are a fixture, and for good reason.

The key is that they are muscle, not offal in the soft sense. Treat them like a tough cut of beef: either boil them until tender first and then fry hard, or pressure-cook them for twenty minutes. Straight into a hot pan with no pre-cooking and they will be rubbery. Boiled then fried, they are firm, savoury and genuinely delicious.

Ours come cleaned and trimmed, ready to cook. They are very lean, high in protein, iron and B12, and among the cheapest sources of good protein we sell. They pair naturally with our ox liver for a mixed fry, and with wings on a shared platter.

How to Cook Gizzard

  • Boil 30-40 minutes (or pressure cook 20) before frying - this is not optional.
  • Then fry hard in a very hot pan with onion, garlic, ginger and chilli.
  • Score them with a crosshatch before frying for more surface and better texture.
  • Save the boiling liquid - it is good stock.
  • Serve with kachumbari and a squeeze of lemon.

Use within one to two days from the coldest part of the fridge - mince, offal and deli items are more perishable than whole cuts. To freeze, portion flat, wrap tightly and label with the date.
